Risotto primavera - pic by pic

First, a confession to make: I cheated on the title. It's not exactly "pic by pic" 'cause I missed one or two steps. But the most important steps are here. A lot of people think that it's hard to cook a risotto. I disagree, but maybe I have some Italian gens that I don't know about them in my body, 'cause I really think that risotto is one of the easiest dishes too cook.

You can find the recipe I usually use here. For this one I used spinach and mushrooms.



Garlic, always garlic. And if you like, onions too.

Rice + spinach + mushrooms + water + vegetable stock cube

I'm finally cooking again. Matteo loves it.
This is the soy mince with garlic, tomato sauce and parsley that I did yesterday for our spinach crepes. I really love cooking with parsley and use it in basically everything.

All bout ... my paper zine


This is not (just) about vegan food but you can read about that too in my paper zine. In 1998 I started the paper zine Outspoken in Brazil and I'm still doing it (the next edition will be the #11). Now I decided to do the zine in English as well and this will be the #0. It is a hardcore zine and most of the articles and interviews are about hardcore, but I always try to have at least one article or one interview related to veganism. I became vegan going to hardcore shows and my way to say thanks is to continue promoting the veganism in the hardcore and trying to make the hardcore kids see that they have an option. This issue brings, among other things, an interview with John Joseph and his new book, Meat is For Pussies, and I hope that everybody - also outside the hardcore - will support the zine and get a copy of it.


If everything goes right it will be available at the gig (in Dublin) next Sunday and at the HUP on line store next week.

Polenta flour - Part I

A few days ago Matteo bought a package of polenta flour. I won't write too much about it today 'cause I have some plans about this for the next days, but for those who don't know, mainly my Brazilian friends I could say, polenta flour is corn flour, the flour we all use to make polenta. Having said that, this post is about the dough that I did today for our lunch pancakes (or crepes, call them in the way you want).

When my best friend Clarissa came to Dublin in March I cooked the frittata for her and Dennis and she decided to make them back home. She did the first day just as my recipe but for the second time she didn't have chickpea flour and she decided to use the corn flour and said that it had worked perfect. So yesterday I decided to use the polenta flour to make some pancakes. I just changed 1/2 cup of the regular recipe. The final result was amazing. The dough was soft, with a great texture. I did the pancakes opened and used the soy sauce that was supposed to be the filling as layers.


And if you want to make some gluten-free recipes, this flour is a great substitute as well! It is tasty, gives a nice yellow color to your dish and it is delicious.

Happy Mothers Day


Today is the Mother's Day in Brazil and I miss my mom. I miss her every single day, even being able to talk to her with the MSN or Skype two or three days a week. She is my best friend. Yes, she is the best mother in the world, and if I am a good person today, she has the credit for it. I wish I could give her a big hug now, but I will do it soon.

I miss my grandma too. I miss the amazing lunch for the Mother Days we used to have at her house. I never had another grandma, so she was the only one. She was unique too. And she will be remembered forever.

The good and the bad

The good: going to a vegetarian restaurant and listening that "everything today is vegan".


The bad: going to a meeting against carted stag hunting and having to listen to just animal welfare arguments. (Just to make clear: this is a very important issue and the Irish bill is not a bad thing, we just need more than that.)




We need more. The animals need more. The world needs people that take a stand.
