Can't stop cooking pancakes

Yes, I love pancakes. And I really think everybody does. If you didn't eat some in your life, you should try. If you don't like them, don't talk to me any more ask me to cook some for you.

The best thing about pancakes is that they're easy to cook and you can fill them with anything you want, salty or sweet. And I think my recipe is the easiest in the world:

2 cups white flour
2 cups water
1/5 cup oil
salt

Mix everything in the blender and it's ready to cook (it should be more liquid than creamy). Most of the times I don't totally follow the recipe, so don't worry that much about the quantities. The most important thing to make the pancakes right is the frying pan. You really need a good non sticky one. I tried some times with others and it just pissed me off doesn't work. Let the pancake in a plate for 2 or 3 minutes before fill it and roll it. After cooking and filling all pancakes, you can put them in the oven with some vegan cheese on top and let them cook for 5 minutes.

Miss your pancakes. Now that I have a non sticky frying pan, I'll try it again, 'cos the last time I tried (long long time) and I used a "normal" one, God... total disaster, hehe. Thanks for the recipe again! =*

These look delicious but I have a question: have you found a vegan cheese to purchase or a recipe to make where the cheese is actually good? I am vegan and cheese is what I miss the most. All of the ones I have tried from the store taste very glue-y, and I tried one cashew cheese recipe that was a disaster.

Hi Ashley, it depends of where are you from too. If you're American you probably know all the options.

I'm Brazilian and we can't find vegan cheese there to buy. Here in Dublin I usually buy Tofutti ones, specially this: http://www.goodness.co.uk/cgi-bin/detail/stockcode/418550.html

I never had tried the cashew recipe myself but I have some friends that enjoy it.

Hi,
I'm actually doing a research thesis for my undergrad studies at ucsd and my topic pertains to vegan food blogging.
I feel as though blogs, of any form are an interesting way to be able to connect to people of similar interests. For me, when I made the switch to veganism (a little over a year ago now) I sought out blogs as a means of a support system.

I was wondering if you could give me some insight into why you specifically keep a blog? Why you started blogging? and what, if anything, you feel you gain from others blogs?

Any insight you could give me into the importance of blogging for you would be greatly appreciated.
